If you just use Black (K) and Magenta (M) for instance you
are using two colors, whatever you do with them. Mix it up,
make duotones, all stays two colors.
Yes Black and red text is two colors (officially Black is
not a color, but it is one print action).
You would be better of and would have much more choices,
using Pantone colors. Load the Pantone swatches (assuming
you are working in Illustrator, that is what this group is
about). Thousands of colors are at you disposal. The
printing office just opens that can of ink for that color.
If you scan a picture, make a greyscale and then (I assume
in Photoshop) convert it into a duotone, use the Custom
colors which are Pantone. And yes the printing process will
be a two color one.
